What is this beet?

 

The Badger Flame Beet was a 15 year long breeding project for Irwin Goldman, who wanted to create a beet with greater sweetness, less earthiness, and delicious greens. Dan Barber was so impressed with this beet, that he made it one of the initial seeds for sale at his company, Row 7 Seeds. There is no other product like it on the market.

 

What is the Invasion?

 

The “Seed to Pop-up” Series started on October 7th, as we planted Badger Flame Beet seeds with the youth at Urban Roots Farm. Throughout February, the beets will be “popping up” all over Austin, as chefs incorporate them into a variety of food, beverages, and desserts. 

 

What is its mission?

 

This beet is on a mission to tell the story of chefs and farmers building meaningful relationships, so we can create a more diverse, collaborative, local food ecosystem.

 

What is the AFWA Grant?

 

The Austin Food & Wine Alliance Culinary Grant Program is the nation's first program to provide funding that supports culinary innovation and contributes to the local community.  Urban American Farmer was awarded $5000 to pursue it’s work on the Badger Flame Beet Invasion, and beyond.
